Ricotta is super versatile. Eat it fresh as a spread on toast or use it to cook delicious eats from breakfast to dessert. Here are a few of our favorite dishes. Many of us have only ever had ricotta as part of a home made lasagne. Why stop there? There are many more ways to use ricotta in savory dinner dishes. This ricotta gnocchi is delicious. We had it with fresh tomato sauce. The Herbed Ricotta Cheesecake is not a dessert, but an easy savory tart that's good for dinner anytime.

Ricotta is amazing in desserts. Skagit Maid ricotta has a lovely subtle flowery flavor that pairs beautifully with sugar or honey. Our simplest suggestion is what we call a cheesecake hack--just whip ricotta with some honey, cream and vanilla, add berries and ta da! We've also recently made this Cake of Three. It is a dense pound cake that can be taken along for picnics or accompanied by berries.
